Desserts That Work For You Not Against You

 

Dessert 1 – Creamy Chocolate Mousse

Refridgerate 1 can of full fat Coconut Milk (from Whole Foods).  Melt 1-2 squares of unsweetened chocolate squares with a small dab of coconut oil.  Then add 2 individual serving packets of Stevia to the chocolate per square (2 squares = 4 packets).  Strain the solid part of the coconut milk into a bowl, add the chocolate, mix and enjoy”  You can add berries for extra deliciousness!

Dessert 2 – Berry Cereal

Defrost a cupful of organic blueberries (or other berries).  When defrosted add to 3/4 cup of unsweetened vanilla Almond Milk.

Dessert 3 – Smoothie

Add 1 cup frozen berries to 2 cups Almond Milk or Coconut Milk.  Blend immediately.  *Add some Stevia to sweeten if needed.

Dessert 4 – Dark Choco Almond Cookies

I found this recipe on the side of one my vitamin suppliers shipping box.  These are soooo good!

  • 1 cup almond butter
  • 3/4 cup natural sweetener (9 individual packets of Stevia but I hear a 1/2 cup of honey is great)
  • 1 large egg (or 1 tbsp flax oil + 3 tbsp of water)
  • 1/4 teaspoon sea salt or Himalayan Crystal Salt
  • 3 oz dark chocolate pieces (I think Ghirardelli has the lowest sugar content)

Preheat oven to 350 degrees.  Combine first 5 ingredients and stir then add chocolate.  Drop rounded tablespoons onto parchment-lined baking sheets.  Bake 10-12 minutes, then cool and enjoy.

Dessert 5 – “Magic Shell” strawberries

Fresh strawberries (straight from the fridge).  Add some coconut manna on top which will harden due to cool temperature of the strawberries.

Dessert 6 – Berries and Coconut Whipped Cream

Take a can of full fat coconut milk and refridgerate it for 3 – 24 hours.  After the can has chilled, flip it over and open with a can opener (so all the settled cream is there at the top) and scoop out the solid cream.  Whip the solid coconut milk with an electric mixer for a few minutes.  Add fresh berries and enjoy!
